Join Chef Paolo Monti to go beyond the recipe; discover the history of our ingredients at the local markets, the technique behind the perfect handmade pasta, and the joy of a slow Tuscan lunch shared over fine wine. Whether you are a curious traveler or a professional chef, your journey into the authentic Italian kitchen begins here."

This intensive cooking program includes:

* 7 nights accommodation w/breakfast at Affittacamere l'Arancio just outside the Lucca Center.

* 5 cooking classes of 4 hours each, covering fresh pasta, risotto, fish, meat appetizers and desserts, for a total of about 60 recipes.

* Winery tour or walking tour of Lucca.

* Day trip to Parma to see the production of Parmigiano Reggiano, Prosciutto di Parma and "Traditional" balsamic vinegar.

* 3 dinners, wine included. 

* Transportation from accommodation and cooking school provided.

Chef Paolo Monti's Cooking Classes, available every day of the week from 10 am to 2 pm and from 4 pm to 8 pm
Classes are taught personally by  Chef Paolo Monti
at his Cooking School in via del Fosso 120, Lucca. Tuscany

Fresh pasta and sauces - Tuscan cooking - Fish and seafood - Advanced fish and seafood class - Risotto scaloppine, carpaccio  - Pizza focaccia and bread - Main ingredients and sauces class with e.v olive oil tasting - Soups and vegetablesVegetarian - Vegan - Italian dessert - Knowing and cooking meat class.

Our Story

Cucina Italiana Cooking School was founded by Chef Paolo Monti in 1992 with a simple mission: to preserve and share the authentic heritage of Northern Italian cuisine.

After decades of experience in international luxury hospitality, Chef Paolo returned to Tuscany to establish a school that goes beyond the apron. Located in the historic center of Lucca, our school is a tribute to the ingredients and techniques that have defined Italian life for generations.

We believe that to understand the food, you must understand the culture. That’s why our story includes trips to local wholesale markets, visits to traditional prosciuttifici in Parma, and seminars on the nuances of extra virgin olive oil.

At Cucina Italiana, we invite you to step away from the tourist path and into a real Italian kitchen, where every dish tells a story of the land and the people who tend it.
